Recipe Time with Chef's Esther & Emma

One of our families' favorite meals:
Mexican Meatloaf
Here is what you will need:
  • 2 lbs lean ground meat (or turkey-that's what I''m using here)
  • 12 oz stuffing mixture
  • 2 cans of black beans
  • 2 cans of diced tomatoes (w/ chili's)
  • 1 can of corn
  • 1 jar of salsa
  • 1/2 cup of water
  • 3 teaspoons of chili powder
  • 2 egg whites
1) Preheat oven to 375 degrees

2) Begin by mixing ground turkey (or meat) in large bowl
3) Add stuffing mixture.. and all of the ingrediants!
4) Mix well! Get those hands down in there!
5) Keep mixing
(don't forget to supervise your helpers to make sure they're not snacking on the meat mixture!)
6) Pour mixture into baking dish; shape into loaf
7) Place loaf in oven; bake for 55 minutes, or until done
(I usually take it out halfway and put foil over it so it doesn't burn)

I've printed out the recipe, since I'll probably need some new cooking ideas when Joanna arrives.
We'll pray for Esther's recovery.
